Sous Chef

We are now recruiting for a Sous Chef to support the Head Chef leading our kitchen team for the winter season 2023/24 and beyond. £33,000 to £35,000 pa DOE plus accommodation and meals (not a typical ski season salary).

You will need to have either a European Passport or other right to work in France. You’ll need to be prepared to prove this or obtain the right independently, as we are unable to support Visa applications at this time.

As part of Lime Wood Group, you’d be joining a collection of 2 award-winning hotels in France and UK. We can offer year-round roles for those who want them, why not Ski the Winter and enjoy the natural setting of the New Forest for the summer, whilst developing a great career!

About the role:

We’re looking for a passionate, experienced Sous Chef who understands the challenges of winter seasonal work.

You are there to support the Head Chef and lead the kitchen team overseeing a hotel operation covering breakfast lunch and dinner, working alongside Executive Chef Angela Hartnett.

There will be a strong focus on leadership in this role ensuring the brigade are motivated, trained and supported.  Experience of assisting in managing a large team is desirable.  You will need to understand and manage the challenges of leading a team in the seasonal mountain environment, working closely with the hotel management team to ensure full customer satisfaction.

Experience and Knowledge:

  • Proven experience as Sous Chef or Junior Sous with a passion for great ingredients, knowledge of French classics, plus Italian styles, especially fresh pasta
  • Proven ability of kitchen management leading a large brigade of 20 
  • Able to run or assist with the running of the kitchen and pass in absence of the Head Chef
  • Calm under pressure, comfortable dealing with large volume 200+ lunch and 100+ dinner
  • Outstanding communication skills
  • Up to date with culinary trends and optimized kitchen processes
  • Credentials in health and safety training
  • Conversational French is an advantage, although not essential

  • Fixed term contract for the winter season dates tbc.
  • Salary UK £30,000 to £35,000pa DOE or equivalent in Euro pro rata for season months (not a typical ski season salary)

  • Holiday (to be taken at the end of the season)
  • A discussion around the opportunity for continued employment in our UK hotels after the season where available.

CHEF DE PARTIE (ALL LEVELS)

A Ski Season with a difference – Start your career with a multi award winning group in the Stunning Mountains of Courchevel. 

We are now recruiting for the coming 2023/24 season and are looking for experienced Chef de Partie’s (All Levels) to join our team. 2,290 – 3,035 EURO PA (DOE) Plus travel expenses, meals, and accommodation.

This is a challenging role balancing the demands of our popular and very busy ski terrace with our refined dining experience within the restaurant in the hotel.  Working with and learning from Angela Hartnett this is an opportunity like no other.  This role will allow you to demonstrate a passion for excellent food whilst playing a key role in our team to meet the challenges of both a high volume and a fine dining offering.

About Us:

Angela Hartnett has taken to the slopes of Courchevel with the Cucina Angelina, our restaurant within Hotel Portetta. The hotel is part of the award-winning Lime Wood and Home-Grown Hotels Group.

The restaurant is a unique offering in Courchevel Moriond.  Cucina Angelina serves Italian influenced mountain food – the best Italian kitchen specialties with a nod to the local Savoyard cuisine. Plenty of locally sourced produce and a terrific range of meats and cuts that will be grilled on an open range within the restaurant.

The restaurant builds on the relaxed, casual style within the hotel Portetta – Our outdoor terrace bar is right at the bottom of the main piste, here we have a wood fired pizza oven, a popular and busy venue throughout the day.

We’re looking for passionate chefs who care about the food they produce and are prepared to work hard in return for an opportunity to work within the stunning Courchevel region.
